Tbilisi

Wanted to write and show something about my city, Tbilisi. This is very old city and you can enjoy visiting it. There are too many nice places to see and get pleased with and one of this places is Akhvlediani Street, place where mostly the pubs are located. Live music, tasty beer, and hot Georgian atmosphere! I'll add video and some photos to see but sorry for low video quality,next time it will be much better!

Khinkali

Khinkali is one of the most famous Georgian dishes.It comes from highlanders. Basically, it's a dumpling with meat inside but also with very tasty juice. And eating technique is different - hold khinkali in your hands, bit a small bite, suck the juice and eat rest. You can also add some black pepper inside or on the dough.
 Traditional khinkalis were made from sheep meat and had 32 "wrinkles". The most common are mixed beef and pork but you can also find khinkalis with potatoes, mushrooms or cheese filling.
Here is our easy (and Polish) version of khinkali.

What do you need:
filling
0,5 kg of meat mixed beef and pork (but you also can do it only from pork one)
3 medium onions
parsley, kindzi
3 or 4 cloves of garlic
spices: salt, red peper

dough
flour
water
salt

How to do it:
First, you need to make filling. Take grinded meat (preferably grinded twice) and mix it with spices. Add grinded onion, garlic and herbs. Mix it all.

Mix flour and salty water and knead it till dough will be soft. (You can also hit it with fists to make even softer;)). Pin out and cut out big circles - our had 10 cm in diameter. Pin out one more time and then put filling inside. Try to make nice shape and check if dough is "glued" correctly on the top.

Boil khinkalis is salty water till they won't float on the surface.

Eat hot with black pepper.

Karaliok

Karaliok, in Poland known as kaki is one of my favourite discoveries in Georgia. At first I had no idea how to eat it - maybe boil, maybe cut, maybe peel. No, you just need to bite it :) But be careful, karaliok has some seeds inside. The best karaliok is spoiled already - more soft and sweet- but "new" ones are also good, just more hard to eat (like hard apple or pear).

Sunrise in Batumi

It's only 45 days till we will pack our bags, catch a plane and move to Poland - best time to summarize my almost 2 years in Georgia. Here is one of my best memories - sight I will never forget.

In May we went for small majówka to Batumi. It was worth to stay awake whole night just to see this. One of my best mornings ever!

Alucha

Alucha is another very popular fruit in Georgia. 
This fruit is very sour, usually people eat it with a little bit of salt. It looks very similar to tkemali, but as I was told, alucha is more full and round.
You can eat it fresh, make kompot or even tkemali.

Mushmala

For the first time I've seen this fruit during our trip to Gonio fortress. Tengo just showed me a big tree with small, yellow fruits and told me to taste it. Fresh and young mushmala has rather thick skin and sour taste, spelled one is less tasty (in my opinion it has no taste - it's not sweet, not sour, not anything). I believe mushmala would be great to make jam from it. Maybe I will try... next spring :D

Easter in Georgia - red eggs


About Red Eggs I heard around 2 weeks before Easter. Everyone was talking that they're delicious and that one can't stop eating them but noone wanted to tell me what exactly they are and they are made. Finally, I got to know WHAT they are - casual eggs boiled for 15-20 minutes in beetroot broth.

Red eggs are a symbol of torture and can't be forgotten on Easter table. Traditionally, they should be eaten with sweet cake - Paska. Very original combination for me but tastes good :)

How to make it:
1. Prepare beetroot broth - boil mashed beetroot with brown onion's skins on Great Friday. Let it stand overnight outside. Next day morning you can start "painting" eggs.
2. Place eggs inside hot red broth and boil them for 15-20 minutes. "Mix" eggs from time to time so they will have nice and intensive colour on all shell.
3. If you want to have some fun, place herb (we had parsley) on egg shell and wrap it nicely in tights. As a result you will have a herbal pattern.

Georgian alphabet

Exactly 1 year ago I heard Armenian joke about Georgian alphabet:

"Georgians were very jealous about beautiful Armenian alphabet so they came to Mesrop Mashtots (creator of Armenian alphabet).
- Please Mr Mesrop Mashtots, create some beautiful alphabet for us to.
Mesrop stopped eating his spaghetti, took plate and threw all pasta behind him.
- Here you go, this will be your alphabet."
